Homemade Roasted Garlic Powder Recipe

In spite of having a bad year for gardening here, with a late frost on June 15 this year, we had a bumper crop of garlic. I’m going to share how I make homemade roasted garlic powder in my oven!

 

Why the oven? Mainly because I don’t like trying to get the stinky garlic smell out of my dehydrator! Drying garlic in the oven also gives it more of a roasted flavor and beautiful golden color.

 

How to Dry Garlic in the Oven

Preheat the oven to it’s lowest setting; my oven goes down to 150.

Crush each clove of garlic by placing it under the flat side of a wide knife and pressing or lightly hitting the knife with the palm of your hand (be careful not to cut yourself!). Remove the peels and place the cloves on a cookie sheet.

Put the sheet in the preheated oven and turn the oven off. Every couple hours, when the oven cools down, turn it back on low to warm up, then back to off. Keep drying the garlic until it is a light golden brown color and the cloves are dry enough to snap in two.

Tip: if the garlic is not finished drying by bedtime, I turn the oven off, leaving the garlic in, and turn it back on in the morning. I don’t want to burn the garlic or start a fire.

Let the garlic dry completely, then process into a fine powder with your Vitamix or food processor. My Vitamix is my absolute favorite kitchen tool I use for everything from applesauce and baby food, to smoothies and ice cream, to butter and peanut butter, to flour and grinding spices. If your garlic was nice and dry, the plain garlic powder will last for a few months or more, depending on your humidity. This is so handy to have in the kitchen, and also makes a nice gift!
