Easy Loaded Peanut Butter Cookie Recipe ~ Gluten Free
This Easy Loaded Peanut Butter Cookie Recipe is not only gluten free and grain free, it makes the most amazing, crowd pleaser cookies ever! Plus, this recipe can be made with coconut sugar for a cane sugar free, low glycemic, diabetic friendly option!
I should warn you, though…these cookies might not last very long. At least they didn’t in our house (guilty face)!

I highly recommend using organic or higher quality ingredients for this peanut butter cookie recipe, not just for your health, but because there really is a huge difference in taste! This is especially true with the sugar – an organic sugar that is less refined adds so much flavor to the finished product. Organic cane sugar is the best in this recipe as far as taste goes, but I do prefer to make it with coconut sugar since our family normally avoids cane sugar.

Easy Loaded Peanut Butter Cookie Recipe
Ingredients:
- 1 cup high quality peanut butter (or make your own!)
- 1 cup organic cane sugar or coconut sugar
- 1 egg
- 2 tsp. vanilla extract
- 1/2 cup chocolate chips ( I use Lily’s chocolate chips for a sugar free option, otherwise I use Equal Exchange)
- 1/3 cup shredded coconut
- 1/4 cup coarsely chopped peanuts
Preheat oven to 350.
Beat peanut butter, sugar, egg and vanilla until smooth.
Stir in chocolate chips, coconut and peanuts.
Roll dough into 1 1/4″ balls and place on a greased cookie sheet. Bake until golden, 14-17 minutes.
