Easy Stove Top Sweet Potato Fries Recipe

These yummy sweet potato fries are so easy to make, besides being healthy and delicious! I had quite the time taking a picture of some before they were all gone!

Ingredients:

  • 1/3 cup coconut oil (we like to use this organic coconut oil that is NOT raw/extra virgin; it has a milder flavor than raw coconut oil and since we are cooking it anyway, there is no need to pay more for raw oil)
  • 1 large sweet potato (we like white sweet potatoes best!)
  • sea salt

Heat the coconut oil in a deep skillet over medium heat. Slice sweet potato into fries 1/3″ wide and 3-4″ long. Carefully add potatoes to hot skillet. I like to put a grease splatter guard on top of the pan.

 

Keep the burner around medium heat: the oil should be sizzling, but not jumping out of the pan at you! Flip the sweet potatoes every few minutes until they are golden brown and crispy. Turn the burner off and salt to taste. Serve warm!

 

Tips to keep your fries from falling apart:

  • Keep the oil as hot as is safe and don’t add the potatoes to the pan until the oil is nice and hot
  • Don’t over stir, just flip every few minutes as needed to prevent burning
  • Don’t try to cook too many at once; there should be one to two layers of potatoes in the pan. To double the recipe, use two skillets or cook half at a time.
